Hmmm, I'm not sure what I'm going to do yet. I could use NBT to generate the jungle biome on the old map, however the chunks between new and old can look terrible. I could start a new map, then copy/paste buildings from the current map, to the 1.2 map. Or just start from fresh. Let me know what you think.

Well the server will be outdated for anyone who updates to 1.2, until bukkit updates. I plan to use this time to build a decent spawn-point.
If you want to help build the new spawn, you must stay in 1.1, or rollback to 1.1, any help building the new spawn will be much appreciated.
Starting to plan the new spawn isn't a bad idea, I'll post a new topic for ideas/designs/themes.
